Prep Time: 10 Minutes

Cook Time: 30 Minutes

Bakes – 12

Ingredients

150g Plain flour

30g Cocoa powder

1 Teaspoon salt

350g Chocolate orange

200g Butter

300g Caster sugar

100g Brown sugar

5 Large eggs

2 Teaspoon vanilla extract

Method

1.    Heat the oven to 180C.

2.   Butter a regular size baking tray and line it with greaseproof paper. I use a 32 x 22 x 5cm.

3.   Mix together the flour, salt and cocoa powder.

4.   Over a large pan of boiling water, place a heatproof bowl and add 250g chocolate orange and butter, stir until both are completely melted, remove from the heat.

5.   Stir in the brown sugar and caster sugar until fully dissolved and smooth.

6.   Add one egg at a time stirring in between each addition.

7.   Stir in the vanilla.

8.    Add the flour mixture to the chocolate mixture and fold until combined. Place the rest of the whole chocolate orange pieces on top of the batter.

9.   Pour the batter into the tray and bake, check around 20 minutes with a toothpick, if it comes out dry and has a shiny shell (see picture) then the brownie is cooked.

10.  Cool on a wire rack.
