Raspberry & Coconut Loaf

M&S eat your heart out, this cake is just as good and so easy to bake!!!

Prep Time: 5 Minutes (yes it is that easy)

Cook Time: 1 Hour

Bakes: 1 Loaf cake


Ingredients

225g Self raising flour

175g Butter

175g Caster sugar

75g Desiccated coconut

3 Large eggs (Add one more if they are small)

Tip - I have used fresh raspberries before and added them into the batter just before going into the loaf tin. (I used around 150g or just a small pack of raspberries. I prefer the cake without as the cake is still as moist without the berries.

Topping

5 Tbspn raspberry jam (use as much as you like, this is just to give you an idea)

Coconut to sprinkle on top (again use as much as you wish)


Method

  1. Pre-heat the oven to 160C.

  2. Mix all of the ingredients together until combined.

  3. Put the mixture into the loaf tin (ensure you use greaseproof paper to line the tin).

  4. Bake for 1 hour in the middle of the oven I normally bake this for around 50 minutes, then check it with a skewer, if the cake is not baked keep adding 10 minutes at a time until the skewer comes out clean.

  5. Once baked leave on a wire rack too cool.
