My take on a Caesar Salad

If your looking for something quick, tasty and light, this recipe is for you!!!!

Cook Time: 15 Minutes


Ingredients - (Recipe is based on two eating)

1 Pack of Marks and Spencer 2 chicken breast fillets

1 Marks and Spencer garlic bread baguette

1 Bottle of Marks and Spencer creamy caesar dressing

1 Pack of baby spinach

Salt and pepper

Olive oil

Thin slices of parmesan cheese (have as many or as little as you wish)


Method

  1. Pre-heat the oven to 190C for the garlic bread.

  2. To prepare the chicken rub in extra virgin olive oil enough to coat it, then season the chicken with sea salt and cracked black pepper.

  3. Put the garlic bread into the oven, it should only take around 8-9 minutes to become golden brown.

  4. Heat the pan for the chicken on medium heat for around 2-3 minutes.

  5. Add the chicken into the pan and sear both sides until golden brown, depending on size, it may take longer or shorter to cook through, you can always check this by cutting the breast in half.

  6. Whilst the chicken is cooking, portion the spinach onto each plate (as much or as little as you wish). Slice the parmesan thinly in preparation to add last.

  7. Once the chicken is cooked, slice into bite sized pieces.

  8. Remove the garlic bread and chop up rustically again into bite sized pieces.

  9. Add the chicken to eat plate on top of the spinach, then add the garlic bread again portion as you wish, sprinkle the parmesan on top and add the dressing for taste:)

    Note: - The reason I have recommended the Marks and Spencer caesar dressing is because it is creamier and less vinegary than some other brands, allowing the taste of the chicken and parmesan to come through.

    Note:- If you really want to throw caution to the wind and remove the chicken and replace it with another ingredient, roasted chick peas work really well, I have also added cucumber and cherry tomatoes before:).
