Large Cookies:)

We all know bigger is better….

 Prep Time: 45 Minutes 

 Cook Time: 25 Minutes 

 Bakes 4 large cookies 


Ingredients 

 217g plain flour 

113g Unsalted butter 

107g Light brown sugar 

75g Caster sugar 

1 Large egg 

0.5 Tbspn vanilla extract 

0.5 Tspn baking soda 

0.5 Tspn baking powder 

¾ Tspn salt 

226g Chocolate chips (optional smarties)


Method

  1. Melt the butter in the microwave or in a pan on the hob, once melted ensure the butter is cooled before use. 

  2. Once the butter is cool mix in the light brown sugar and caster sugar until smooth. 

  3. Add in the vanilla and egg, stir again until smooth.

  4. Add in the baking powder, baking soda, salt and flour until smooth. 

  5. Break up the chocolate orange pieces by placing in a plastic food bag and smashing with a rolling pin.

  6. Stir in the chocolate keeping a little back to be used to placed on top of the cookies when just baked. 

  7. Separate the dough into 170g balls wrap in cling film and place in the fridge for 30 minutes. 

  8. Pre-heat the oven to 160C and place the cookies on a non stick baking tray. Please note they spread quite a bit so don’t be scared to bake in two batches if the tray doesn’t have enough space. 

  9. Bake for 20-25 minutes, until they are brown, they should just be baked, don’t be afraid to take them out!!!

  10. Remove from the oven and press some of the saved chocolate into the tops of the cookies (smarties optional) and sprinkle a few flakes of sea salt on top. 

  11. Leave to cool on the baking tray for around 20 minutes before transferring to a wire rack.
